Soul Food

Some of the food we eat  is connected to joyful and warm moments. The more effort it takes to prepare, the more it brings loving people together. “Kebbeh meshwiyeh” is one of those  dishes. For the very few who aren’t familiar with what “Kebbeh meshwiyeh”  is made of, it’s a dough made of the combination of meat and bourghol (cracked wheat). It’s filled with meat spiced with basil & onions or with “sha7meh” (solid animal fat) & hot pepper. The art is not only in the process of making “kebbeh” but also in grilling it over charcoal.

The operation room (the kitchen) gets crowded from the early morning. The bourghoul is soaked with water, then it’s removed aside where it’s left to gain volume. Later, it’s mixed with the super minced meat to form the dough that is the most essential element in the recipe. If you’re a beginner, you need special molds to form the pieces. Professionals, use the other side of the plate to spread the dough then make sure to seal it after filling it to be grilled in a later phase. Mum invented another way to make it easier: first, we make some dough balls of the same size. Then, we use a moist  nylon bag , fold it in half, put the dough inside and squeeze it with a plate & voila! Why am I killing you with these details? Well, I just wanted to share my part in the “Kebbeh meshwiyeh” making 😛

“Heavenly bombs”, that’s what I call “Kebbeh meshwiyeh”. It’s served with radish salad, another fatal invention… And you can never eat it alone… It’s a must to gather all the people you love around the table & I couldn’t think of a better place but Tayta’s! My uncles & Aunts, my cousins & their spouses & kids all around. 5 to 10 minutes & it’s all gone! But I have to admit that it’s worth it. And no matter how much I nag while helping, I’d do it every day…
